Convection Roast Salmon w/ Avocado Orange Salsa

Ingredients
- 1 1/4lbs - fresh salmon filet or pieces
- Mixed Italian Seasoning
- Olive Oil
- 1 - ripe but firm avocado, peeled and chopped into small dice
- 1 - large navel or Cara Cara orange, peeled, membrane removed and segments cut into small dice
- 1 - clove garlic, minced
- 1 - handful cleaned cilantro leaves chopped
- 1 - lime, juice only
Instructions
- Preheat the oven to Convection Roast or Convection Bake 325
- Line a rimmed baking sheet with parchment paper and lay the fish skin side down on the paper.
- Season the fish with a good pinch of mixed Italian seasoning, kosher salt and pepper and a drizzle of olive oil
- Place in the oven and cook for 12- 15 minutes or until the fish is firm in the center.
- Prepare the Avocado Orange Salsa
- Combine all the ingredients in a small bowl and carefully toss together, season with salt and the fresh lime juice and spoon over the cooked salmon before serving
